So when I started working on recipes for my golf-inspired cookbook, I knew I had to give the iconic pimento cheese sandwich a fresh new spin. Enter: Pin-Seeker Pimento Bites—a bite-sized, toasted, and totally addictive twist that’s perfect for hosting, snacking, or packing in the cooler.

These little guys are crispy on the outside, melty on the inside, and made to impress your golf group or your picky kids. You can prep the filling ahead of time (ideal for busy moms!), and then just bake and serve. We love them for Masters watch parties, tailgates, or a fancy-ish 19th hole appetizer.

Ingredients:

For the Pretzel Bites:

  • 1 can refrigerated pizza dough
  • 1 egg (for egg wash)
  • Coarse salt (for topping)

For the Pimento Cheese Filling:

  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/4 cup diced pimentos
  • 1/2 tsp garlic powder
  • Pinch of cayenne pepper (optional)
  • Salt & pepper to taste

Instructions:

  1. Make the Pimento Cheese:
    In a bowl, mix all filling ingredients until smooth. Adjust seasoning to taste. Refrigerate while you prep the dough.
  2. Prep the Dough:
    Roll out the pizza dough and cut into 2-inch squares.
  3. Stuff the Bites:
    Place 1 tsp of pimento cheese in the center of each square. Fold corners in and pinch to seal into a ball.
  4. Bake:
    Place stuffed dough balls seam-side down on a lined baking sheet. Brush with egg wash and sprinkle with coarse salt.
    Bake at 400°F for 12–15 minutes or until golden brown.
  5. Serve Warm:
    Perfect on their own or with a honey mustard or ranch dip.
