Makes: 8–10 bars

Ingredients:

  • 1 ½ cups rolled oats
  • ½ cup peanut butter (or almond butter)
  • ¼ cup honey or maple syrup
  • ¼ cup chopped dates or dried figs
  • ¼ cup chopped almonds or walnuts
  • ¼ cup pumpkin seeds or sunflower seeds
  • 2 tablespoons chia seeds
  • 1 scoop protein powder (vanilla or unflavored – optional)
  • 1 teaspoon cinnamon
  • Pinch of salt
  • Optional: ¼ cup dark chocolate chips or cocoa nibs

Instructions:

  1. Line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mix oats, chopped dates, nuts, seeds, chia seeds, cinnamon, and salt.
  3. In a small saucepan over low heat, gently warm peanut butter and honey until smooth and pourable. Remove from heat.
  4. Pour wet mixture over dry ingredients. Add protein powder (if using). Mix until well combined.
  5. Press mixture firmly into the prepared pan. Use a flat spatula or your hands (with parchment) to pack it down tightly.
  6. Refrigerate for 1–2 hours until firm, then slice into bars. Store in fridge up to 1 week or freeze for longer shelf life.
