Fresh, Hydrating, and Perfect After a Round
There’s something about summer golf that hits different — sun-soaked fairways, sweaty foreheads, and that deep craving for something light and refreshing when you finally head off the course. That’s where this Summer on the Greens Salad comes in.
It’s crisp, cool, and totally energizing. With hydrating watermelon, peppery arugula, nutrient-rich spinach, and creamy feta, it’s a quick toss-together that feels a little fancy but takes almost no time at all.
Perfect for lunch on the porch, dinner by the grill, or packed in the cooler for a post-round snack.
What’s in It?
- Fresh baby arugula + spinach (greens that play well together)
- Juicy watermelon chunks
- Crumbled feta for that salty-sweet balance
- A zesty lime and olive oil drizzle
- Optional fresh herbs (mint or basil — highly recommend!)
- A light touch of red onion and balsamic glaze, if you’re feeling extra
Ingredients (Serves 2–3):
- 2 cups baby arugula
- 2 cups baby spinach
- 2 cups seedless watermelon, cubed or balled
- 1/2 cup crumbled feta cheese
- 1/4 cup thinly sliced red onion (optional)
- 1 tbsp chopped fresh mint or basil (optional but recommended)
- 1 tbsp olive oil
- Juice of 1 lime
- Salt & pepper to taste
- Optional: balsamic glaze for drizzling
- Optional: Make it a meal and add grilled chicken
How to Make It:
- In a large bowl, combine arugula and spinach.
- Add watermelon, red onion, feta, and herbs.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Drizzle the dressing over the salad and toss gently.
- Optional: top with a zig-zag of balsamic glaze for that fancy finishing touch.
