Makes: 6–8 tacos

Ingredients:

For the Tacos:

  • 1 lb grilled chicken, shrimp, or tofu (seasoned with taco seasoning or simple salt, pepper, lime)
  • 6–8 small corn or flour tortillas
  • 1 cup shredded cabbage or lettuce
  • 1 avocado, sliced or mashed
  • ½ cup cherry tomatoes, halved or diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Optional Add-Ins:

  • Crumbled queso fresco or feta
  • Pickled jalapeños or radishes
  • Fresh corn or black beans

For the Light Lime Crema:

  • ¼ cup Greek yogurt or sour cream
  • Juice of ½ lime
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Cook your protein: Grill or pan-sear your chicken, shrimp, or tofu until cooked through. Slice into strips or chunks.
  2. Warm the tortillas in a dry skillet or microwave until soft and pliable.
  3. Make the crema: In a small bowl, mix together Greek yogurt, lime juice, garlic powder, salt, and pepper.
  4. Assemble the tacos: Layer cabbage/lettuce, protein, avocado, tomatoes, red onion, and any extras onto the tortillas. Drizzle with lime crema and top with cilantro.
  5. Serve with lime wedges on the side and enjoy immediately.
