Chippers Chilli Recipe (Serves 6)

Ingredients:

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) fire-roasted diced tomatoes
  • 2 tbsp tomato paste
  • 1 cup chicken broth

  • 1 tsp cumin
  • Salt & pepper to taste

Instructions:

  3. Add beans, tomatoes, tomato paste, broth, and spices. Bring to a simmer.

Clubhouse Cornbread Minis

Ingredients:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 eggs
  • 1 cup milk or buttermilk
  • ¼ cup honey
  • ¼ cup melted butter

Instructions:

  1. Preheat oven to 375°F and grease a mini muffin tin.
  2. In a bowl, mix dry ingredients. In another, whisk together eggs, milk, honey, and butter.
  3. Combine wet and dry ingredients just until mixed.
